One Year Lighter
A year of soft afternoons in Davao, and six new cakes to celebrate them.
A year ago this month, the ovens at SM Ecoland Annex warmed up for the first time and a tray of rolls came out soft at ten in the morning. We did not know yet whether Davao wanted another bakery. Twelve months later, the answer feels clear: the city was never short on bread. It was short on somewhere to breathe.
That is the quiet lesson of our first year, and it is why this anniversary carries the line One Year Lighter. The counter has met students between classes, parents on the way home, remote workers stretching one iced coffee across an afternoon, and plenty of families grabbing pasalubong before a flight. The orders change. The reason behind them rarely does.
What the first year taught us
The lesson came slowly, in the shape of regulars. Familiar faces started arriving at the same hour each week, ordering the same thing, staying a little longer than the order required. Three in the afternoon turned out to be the busiest and gentlest part of the day.
So we shaped the shop around that rhythm instead of against it. Trays are timed so the softest rolls land in the late afternoon. Seats stay open for anyone who needs twenty unhurried minutes. Flavours lean lighter and less sweet, the kind you can finish without feeling weighed down on the way back into a busy day.

A year measured in small moments
Anniversaries invite numbers, and a few are worth mentioning. Sacks of flour. Thousands of trays. One standing order placed every Saturday morning for fifty weeks straight. Still, the figure that matters most is the hardest to count: all the ordinary afternoons that ended a little better than they started.
Something new for the occasion
A first birthday deserves cake, so this month also brings our biggest menu addition since opening day. Six cakes join the counter, built on the same ideas that shaped the rolls. Soft crumb. Generous filling. Sweetness that knows when to stop.
Each one is made to be shared rather than admired from a distance. They travel well in a box, slice cleanly at a crowded table, and feel just as right on a quiet Tuesday as they do at a celebration.
